Post-kidney removal nutrition

My husband had a kidney removed as a result of renal cell carcinoma. He is doing fine now, and after a year, remains cancer-free. The urologist has told him he needs to be on a low-protein diet so he doesn't overwork the remaining kidney, and lose 15 lbs. All vegetarian recipes I find just find meatless ways to get protein, and those without protein simply increase carbs, and I don't think increasing carbs is going to help with weight loss. I can't find a renal dietician in our area - has anyone had to go through this? Thanks.

There is a great renal cookbook put out by Cleveland Clinic that I have used. Great recipes...most taste very good. Check your local library for it or you can order it online. It's called "Renal Cooking For Renal Diets" by Cleveland Clinic.
